Wheat berries are the un-hulled, whole grain of the wheat plant. When cooked, they become chewy and nutty, and are a hearty grain to serve instead of rice. Boil wheat berries in plenty of lightly salted water for 1 hour. Drain, and toss with a splash of freshly squeezed orange juice, a drizzle of extra virgin olive oil, and salt and pepper to taste. Cut an acorn squash in half, brush with olive oil, sprinkle with salt and pepper, and roast at 350°F for 30 to 40 minutes, until tender. Cut each half lengthwise into long strips, then peel, and cut into cubes; toss cubed squash with wheat berries for a colorful and tasty combination.
