Low Carb Stuffed Bell Pepper

Stuffed bell peppers are an all-in-one dinner that makes eating vegetables easy and delicious. But if you are monitoring your carb intake, you may think stuffed bell peppers are a no-go because the dish usually has a rice or pasta stuffing. Instead of avoiding this yummy meal, replace the starchy foods with sauteed vegetables and flavorful herbs. There will be fewer carbohydrates in the dish but it will be nonetheless nutritious.

Preheat oven to 375 degrees F. Bring a large pot with water to a boil and add the peppers. Allow peppers to boil for about 3 minutes. Remove peppers from the water with tongs and set aside.

Heat oil in a large skillet over medium heat. Add ground meat. Brown for about 3 minutes. Add garlic, carrots, celery, onion, mushrooms, diced tomatoes, tomato paste, parsley, thyme, rosemary, salt and pepper. Cook for an additional 3 to 5 minutes.

Stuff the peppers evenly with the meat and vegetable mixture and, if desired, top with cheese. Place stuffed peppers in a 3-quart baking dish.

Bake for about 20 minutes until cheese is melted and browned. Remove from the oven and serve immediately.
